The Kabayaki headon abdomen-cut is a Japanese traditional cate in Guan Xi district headed by Osaka. During the produce process, the eels are cut from abdomen and the fish head is retained, then a special soy sauce is added to make it a delicious roasted eels. This producing method makes integrity in the appearance of the roasted eel, its not only bright and polish in color, but also tender with elasticity in fleshy and really fragrant in smell.
