Monosodium glutamate(MSG) is used as a flavor enhancer in a variety of foods prepared at home,in restaurants,and by food processors.

Monosodium glutamate,commonly known as MSG,is a sodium salt of an amino acid(L-glutamic acid).it is a white crystalline substance soluble in water and alcohol;practically odorless.MSG is used to intensify flavors of foods.it is produced by a bacterial fermentation process with starch or molasses as carbon sources and ammonium salts as nitrogen sources(steffen process).MSG is not a direct taste enhancer but a complex flavor enhancer for gravies,meats,poultry,sauces,and in other combinations.It is also used to enhance the taste of tobacco and has been used medically to treat hepatic coma.
