Specificity: white crystal or powder; taste salty, readily deliquescence, readily soluble in water or glycerine (1g/0.5ml water), relative gravity: 1.98, when heated to 230, it will melt and decompose.

Uses: in food industry, it is used as buffer, cheleate agent, stabilizer, antibiotic oxidizer, emulsifier, flavor regulate. Used in dairy products, jellies, jam, meat, tinnedpastry. Used as emulsifiera in cheese and used in citrus freshening. In pharmaceutical, it is used for curing hypokalimia, potassium depletion and alkalization of urine.
